Jajangmyun (pronounced jah-jahng-myuhn) is a noodle dish made with vegetables and black bean paste that has become very popular in Korea.  This dish is originally from China, but Koreans have adopted it and made it one of their own.  Jajangmyun is traditionally served with kimchi, sliced yellow mu, sliced onion, and some black bean paste on the side.  The mu and onion may be dipped in the paste.


  • Cucumber - 1
  • Zucchini squash - 2
  • Onion - 3
  • Cabbage - 1/2
  • Enoki mushroom - 2 small packages (about 7 ounces) - These are long, thin mushrooms.
  • Roasted black bean paste - 14 ounces
  • Jajangmyun noodles - about 7 ounces per serving - These are thick, white noodles made from wheat flour.
  • Cooked meat in small chunks (optional) - Most people use pork, but you may use beef or whatever meat you prefer.
  • Garlic - 2 cloves
  • Cooking oil
  • Sesame oil
  • Olive oil
  • Salt
  • Pepper

This recipe makes enough sauce for about 5 servings.

Step 1

Cut the zucchini into short, thin slices.  First slice the zucchini, then slice the slices.  Put the sliced zucchini into a large bowl.

Step 2

Cut the onions into chunks, about 18 chunks per onion.  We used one red onion for extra color.  Add the onion chunks to the bowl.

Step 3

Cut the half cabbage into small chunks, about 1 to 2 inches long.  Add the cabbage chunks to the bowl.

Step 4

Smash the garlic, and add it to the bowl.

Step 5

Add the enoki mushrooms to the bowl.

Step 6

Put the contents of the bowl into a wok.  Add 2 tablespoons of cooking oil, 2 tablespoons of sesame oil, and 1 tablespoon of olive oil.  If you are using meat, add the meat chunks now.  Cook on medium-high heat for about 12 minutes, stirring frequently.

Step 7

Add about 14 ounces of roasted black bean paste to the wok.  Add 2 teaspoons of salt and a dash of pepper.  Simmer on low-medium heat for about 10 minutes, stirring frequently.

Step 8

Cut the cucumber into short, thin slices.  First slice the cucumber, then slice the slices.

Step 9

Boil 4 cups water per serving.  Add about 7 ounces of noodles per serving.  The noodles may come  in serving size groups in the package.  Boil for about 8 minutes.

Step 10

Drain the noodles.  Put noodles into serving bowls.

Step 11

Pour sauce on top of the noodles.  Top with some cut cucumber.  Serve the jajangmyun without mixing.  Before eating, each person should mix the sauce and noodles well.  Enjoy!
